2 cups diced carrots
1 cup diced celery
1 cup chopped white onion
1 tablespoon fresh minced garlic
2 cups chicken broth
1 1/2 cups white rice
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon smoked paprika
1/4 teaspoon garlic salt
1/4 teaspoon red pepper flakes
2 cups cooked diced chicken
1/2 cup fresh chopped parsley
1 cup shredded cheddar cheese


Instructions

Heat the olive oil in a large skillet over medium heat. Add the carrots, celery, onions, and garlic, sautéing for about 5 minutes until they begin to soften.
Pour in the chicken broth and stir in the rice. Cover with a lid and cook for 15 minutes, or until the rice is tender and the liquid has been absorbed. Stir the mixture and season with salt, black pepper, smoked paprika, garlic salt, and red pepper flakes.
Fold in the cooked chicken and chopped parsley. Sprinkle the shredded cheddar cheese on top, cover again with the lid, and allow the cheese to melt. Remove the lid and serve warm.
